Ingredients:
* 1 broccoli, chopped up, including stalk
* 1 leek, washed and sliced
* 2 small potatoes, diced
* Bunch of thyme
* 500ml veggie stock
* 500ml water
* 1 Tbsp Cream
* 1 Tbsp Olive Oil
* Nutmeg
* Salt & pepper
Saute leek in olive oil, add potatoes, the stalk of broccoli ( leave the florets for later ) thyme, veggie stock, water, nutmeg and season. Bring to boil, then simmer until potatoes are almost cooked through, add broccoli florets and simmer for a further 5 mintues. Blend in a blender, transfer back to pot and add cream and season to taste. That's it...pretty simple and healthy
