What's for dinner - Chilli Non Carne

This is by no means a glamorous meal, but I thought I'd put up an everyday meal that we have, with the possibility of making this a regular segment. I, like most people have a list of meals we have on rotation, quick, easy and cheap are key. I make this with nutmeat, sounds pretty weird if you haven't heard of this ingredient before, but I really like it and so does my non vegetarian husband. You could use any meat substitute of even leave it out altogether and make it with just beans.

Ingredients:
1 can Nutmeat
1 can kidney beans
1 can tomatoes
1 packet of chilli con carne mix
3 stalks of celery
1 capsicum
1 sprinkle of frozen corn
1 onion, chopped
2 cloves of garlic, crushed

Cook onion and garlic in a large fry pan until onion it transparent, and nutmeat; I shred it with a fork, so it slightly looks like mince (it actually looks like dog food straight from the can, but rest assure it doesn't taste like it!) add the con carne mix, kidney beans, tomatoes and veggies. Bring to a boil, then simmer for around 15mins. Serve with rice.
How easy is that!
